The 1984 Daisy Girl Scout Leaders’ Guide recommends making Ice Fruit Cups with Daisy scouts.
Use the following recipe to make Ice Fruit Cups. This is adapted from the Leader’s Guide and not the direct recipe.
Ingredients:
- 4 Cups berries (fresh or completely thawed frozen)
- 1 1/2 C honey (may need less to taste)
- 1 1/2 C water
- 1/2 C orange or lemon juice (recommend orange)
Supplies:
- Measuring Utensils for the honey, water, and orange juice
- Large Bowl & Hand Masher
- Hot Plate or Stovetop
- Cooking pan
- Spoon to stir the hot mixture
- Small Paper Cup for each serving
- (Optional) Popsicle sticks
- (Optional) Cling Wrap
Directions:
- Rise fruit and place in large bowl.
- Allow scouts to take turns mashing the fruit into pulp.
- Place pan with water and honey on hot plate or stovetop.
- Stir occasionally on low heat for a few minutes until it turns into Clear Honey Syrup. Do not boil and continually caution scouts of proper safety behavior around stoves – careful and attentive!
- Perform steps 5 and 6 in quick succession, as the mixture starts to harden after the syrup is added. No need to rush, but do not linger: Add syrup to the fruit in the large bowl. Scouts take turns carefully stirring and mashing the mixture.
- Add juice to the fruit, continuing the stir and mash.
- When mashed as finely as possible, spoon mixture into paper cups, making sure they get liquid and pulp in each.
- All each scout to take their cup home to place in their own freezers. Allow them to freeze overnight before they eat them.
- They can either remove them from the cup and eat with a spoon in a bowl or after a few minutes in the freezer, the mixture begins to harden. Insert the popsicle sticks in the hardening mixture so it stands up. OPTIONAL ALTERNATIVE – Cover each paper cup in cling wrap to help keep the mess contained as they take them home. Scouts can puncture the cling wrap with the popsicle sticks to help them stand up.
This is very similar to Peragua that uses sugar water instead of Clear Honey Syrup.
Or the New Orleans Frozen Cups that uses sugar water and Kool-aid to flavor instead of fresh fruit.
